The Ingredients for 4pp

400g of bucatini pasta

• 200g of pancetta or guanciale, diced

• 8 yolks

• 100g of grated Pecorino Romano cheese

• Salt and freshly ground black pepper

• Olive oil



The Magic of Preparation:


1. Start by boiling a pot of salted water to cook the bucatini according to the package instructions until they are al dente. Drain them, saving a bit of the cooking water.

2. In a large skillet, heat some olive oil over medium heat. Add the diced pancetta or guanciale and cook it until it becomes crispy and golden. Make sure to remove excess oil.

3. In a separate bowl, beat the eggs and mix them with the grated Pecorino Romano cheese. Add plenty of freshly ground black pepper to give it the carbonara flavor.

4. When the bucatini are ready, drain them and transfer them to the skillet with the pancetta or guanciale. Mix well to combine the ingredients.

5. Remove the skillet from heat and slowly pour the egg and cheese mixture over the bucatini. Make sure to mix quickly to prevent the eggs from coagulating too much, but enough to create a creamy sauce.

6. If the carbonara is too thick, you can add some of the reserved cooking water to achieve the desired consistency.

7. Serve the bucatini alla carbonara hot, garnishing with extra Pecorino and black pepper if desired.
