Carbonara...The Queen

"Pasta Carbonara: The Authentic Taste of Rome on Your Plate"

Welcome to my culinary space, where today we'll take you on a journey to the heart of Rome through a timeless classic: Pasta Carbonara.

In the landscape of Italian cuisine, Pasta Carbonara is a celebrity for a reason. Originating from the Eternal City, this delight is an ode to Roman street food, where simplicity and flavor meet in an irresistible marriage.

The Ingredients for 4pp

400g of bucatini pasta

• 200g of pancetta or guanciale, diced

• 8 yolks

• 100g of grated Pecorino Romano cheese

• Salt and freshly ground black pepper

• Olive oil

The Magic of Preparation:

1. Start by boiling a pot of salted water to cook the bucatini according to the package instructions until they are al dente. Drain them, saving a bit of the cooking water.

2. In a large skillet, heat some olive oil over medium heat. Add the diced pancetta or guanciale and cook it until it becomes crispy and golden. Make sure to remove excess oil.

3. In a separate bowl, beat the eggs and mix them with the grated Pecorino Romano cheese. Add plenty of freshly ground black pepper to give it the carbonara flavor.

4. When the bucatini are ready, drain them and transfer them to the skillet with the pancetta or guanciale. Mix well to combine the ingredients.

5. Remove the skillet from heat and slowly pour the egg and cheese mixture over the bucatini. Make sure to mix quickly to prevent the eggs from coagulating too much, but enough to create a creamy sauce.

6. If the carbonara is too thick, you can add some of the reserved cooking water to achieve the desired consistency.

7. Serve the bucatini alla carbonara hot, garnishing with extra Pecorino and black pepper if desired.

There you go! Now you can enjoy delicious homemade bucatini alla carbonara.

The Result:

The result is an extraordinarily creamy dish, with the crispy guanciale contrasting with the creaminess of the sauce. Each forkful is a journey to the heart of Rome, a tribute to Italian street cuisine.

With Pasta Carbonara, we celebrate Roman cuisine in its most authentic form. This dish is an ode to Italian culinary tradition, where simple ingredients transform into a gastronomic work of art. The next time you prepare Pasta Carbonara, remember that you're bringing a piece of Rome directly to your table.

Buon appetito!
